Lion’s Mane Scampi
I came across this recipe over at Fungi Jon and tweaked it a little to my liking. This is a great way to capitalize on the sweet seafood-esque flavor of the lion’s mane.
Ingredients
Lion’s Mane (1/2 lb) shredded
Olive Oil- 4 TB
Linguini pasta - 1 lb
Onion- diced
Garlic - 2 cloves minced
White wine- 1/2 c
Lemon Juice- 1 lemon’s worth
Parsley
Green onions
Grated Parmesan Cheese (optional)
salt and pepper to taste
