Lion’s Mane Scampi

I came across this recipe over at Fungi Jon and tweaked it a little to my liking. This is a great way to capitalize on the sweet seafood-esque flavor of the lion’s mane.

Ingredients

  • Lion’s Mane (1/2 lb) shredded

  • Olive Oil- 4 TB

  • Linguini pasta - 1 lb

  • Onion- diced

  • Garlic - 2 cloves minced

  • White wine- 1/2 c

  • Lemon Juice- 1 lemon’s worth

  • Parsley

  • Green onions

  • Grated Parmesan Cheese (optional)

  • salt and pepper to taste

Instructions

Prepare pasta. Saute garlic and onion in olive oil in a skillet over medium heat. When translucent, add shredded lion’s mane and saute for another 8 to 10 min. Add wine and lemon juice to the pan and simmer together for about 3 minutes. Remove from heat, season with salt and pepper to taste, toss with the drained pasta. Top with chopped green onions and parsley and grated parmesan if desired. Enjoy. This makes enough for 4 in my house.
