Wood Ear Salad
Ingredients:
6-8 oz Wood Ear Mushrooms
1 small carrot , juliened
3-4 green onions, sliced thinly
1 TB brown sugar
1 clove garlic
1/2 tsp minced garlic
1/2 tsp rice vinegar
1 tsp soy sauce
1 TB sesame oil
1 pinch sesame seeds
chili oil (optional)
Directions:
Clean wood ear. Bring a pot of water to boil and prepare an ice bath .
Boil wood ear mushrooms for 5 minutes.
Drain mushrooms and place them in the ice bath.
Pat mushrooms dry and set them aside in a large bowl.
Add the green onions and carrot and gently combine.
Make a dressing by combining brown sugar, garlic, ginger, vinegar, soy sauce, and sesame oil.
Toss salad with dressing and garnish with sesame seeds
