Wood Ear Salad

Wood Ear Mushrooms have a jelly-like texture and are often enjoyed fresh or dried. They get their name from their shape. The flavor is slightly peppery, but they are enjoyed primarily for their texture.

Ingredients:

  • 6-8 oz Wood Ear Mushrooms

  • 1 small carrot , juliened

  • 3-4 green onions, sliced thinly

  • 1 TB brown sugar

  • 1 clove garlic

  • 1/2 tsp minced garlic

  • 1/2 tsp rice vinegar

  • 1 tsp soy sauce

  • 1 TB sesame oil

  • 1 pinch sesame seeds

  • chili oil (optional)

Directions:

  1. Clean wood ear. Bring a pot of water to boil and prepare an ice bath .

  2. Boil wood ear mushrooms for 5 minutes.

  3. Drain mushrooms and place them in the ice bath.

  4. Pat mushrooms dry and set them aside in a large bowl.

  5. Add the green onions and carrot and gently combine.

  6. Make a dressing by combining brown sugar, garlic, ginger, vinegar, soy sauce, and sesame oil.

  7. Toss salad with dressing and garnish with sesame seeds

  8. Enjoy!
